This winegrower produces some Chénas, both the smallest in size and the most unassuming of the Beaujolais crus, despite being adjacent to the famous Moulin à Vent and Fleurie appellations. Pascal’s calm and modesty are in synch with his terroir. As his vines are isolated, surrounded by fields and woods, he is able to practice “supervised control” without potential interference from neighbours less concerned about protecting the environment.
