Annual production: 25,000 bottles Soil: altered granite, pink in appearance, lean and sandy Grape variety: black gamay with white juice, short pruning in goblet or cordon Average age of the plots: 25 years Harvest: manual Yield: 50 hl per hectare Vinification : Traditional vinification by mixing whole bunches and destemmed grapes. Semi-carbonic maceration lasting 7 to 9 days. Bottled fairly early (June), in order to preserve the freshness of the fruit. The Chiroubles Les Gatilles cuvée is a supple and gourmet Chiroubles, with a ruby color, a beautiful freshness of fruit and floral notes revealing the granitic terroir of Javernand. It is a wine to be enjoyed from its first years, rather cool, between 14 and 16°C. Gatilles: this is what we call the little gray lizards, which bask in the sun on our hillsides.
