Cuvée from our oldest vines. It has a lot of roundness and complexity. Delicate wine and yet very long on spices and other tasty notes. Enjoy now and again for 5-8 years. Cuvée made from Gamay noir vines with white juice of about 90 years of average age with a density of 12,000 vines/ha on siliceous volcanic rocks - Reasoned phytosanitary protection certified HVE III - no insecticides - Manual harvesting at maturity optimal. Destemming 50% – semi-carbonic maceration with temperature control below 30°C for 16 days – Roasting of the vat for 6 days then 12-hour racking and punching down - Gentle pneumatic pressing. Aged in vats for 8 months before bottling.
