Structured wine, all in lace, whose breeding in Amphora gives to its fruity flesh a lot of minerality and tenderness. Its graphite side is very seductive. This wine comes from vines of about 25 years old on very altered granite soil. Committed to the HVE3 approach, we grass the rows and trellis. We harvest manually at optimal maturity. We favour a partial de-stemming (60%) followed by a semi-carbonic maceration with temperature control for 14 days. For this vintage we have chosen to raise it in Amphora (Tuscan earth) for 9 months before bottling.
