Pet Nat, or naturally sparkling wine, is a sparkling wine produced using the traditional method, which involves allowing the wine to ferment in the bottle. It is an accessible, light and convivial wine, which differs from champagne in both its production process and style.
Cultivation method
Deep loamy-sandy soil, coarse sand on the surface and granite in the subsoil (at 60 cm), altitude 200 m, south-facing on slopes
Grape variety
100% Gamay
Type of harvest
Hand-picked grapes
Winemaking
Whole-bunch maceration in concrete vats to extract colour, followed by pressing and the start of fermentation in concrete vats, then ‘tirage’ in the bottle to complete alcoholic fermentation, in the style of the ‘ancestral method’. Fermentation in the bottle is completed dry, with no residual sugar, and generates the natural pressure of the sparkling wine, also known as ‘pétillant naturel’. Disgorging takes place in the spring to remove the sediment, followed by sealing with a crown cap.
Wine pairings
Meat pie, fresh goat’s cheese, cold roast chicken with herbs and gherkins.
